Chocolate Chip-Pretzel Cookies inspired by Tanya Burr [vegan] #veganised

This quote suits me 100%, especially as I'm born in October! But besides this, I think that October simply is one of the most beautiful months in the year, every now and then you'll be able to sunbath a little and on other days you'll drink a hot chocolate in front of the fire. You simply get the best of both worlds! So, get your jacket (if needed), go for a walk and appreciate the beauty of the early autumn. Anyway, as it's my birthday month, I came up with something new. Well, maybe not new for the world but definitely new for this blog, long story definitely not cut short: No matter where I go I'll constantly will here that vegans basically can't eat a single thing (salad not included). Instagram and You tube are obviously telling a completely different story but only if you look for those things. If you are a person whose interested in vegan things you'll find an unbelivable amount of content, but if you aren't looking for it, chances are really high that you will never (maybe not never but not often) "stumble" upon vegan recipes. So here we go: I proudly present you #veganised by... me, obviously. Every now and then I'll take recipes by others and with some small alterations I'll turn them into delicious (at least that's what I'm aiming for) vegan pieces.

Today's piece of happiness:
All you need: (for approx. 10-12 cookies)
250 gr. margarine
100 gr. brown or coconut sugar
200 gr. peanut butter
300 gr. flour
1 1/4 tbsp baking powder
1 pinch of salt
100 gr. apple sauce (maybe some extra or a splash of plant milk if it's too stiff)
100 gr. salted pretzels, broken into pieces
200 gr. vegan chocolate chips or vegan M&M (Legend says there are vegan M&Ms out there, but where ever they are, they aren't in Germany, I used chocolate chips with sprinkles to add a little colour)
1. Step: Dough time
Add all ingredients in a bowl, apart from the pretzels and chocolate chips. Mix it and on we go.
2. Step:
Now you add the pretzels pieces and chocolate chips. Stir them in softly as you don't want the pretzels to end up in thousand little pieces.
Form the dough into a ball, cover it with cling film and let the dough chill in the fridge for half an hour.
3. Step: Cookie time
After taking the dough out of the frigde preheat your oven to 180°C. Form the dough into small balls, place those on a baking tray with baking paper and squish them a bit until they look like cookies, bascially. I gave them quite a bit of space to spread but they didn't really do a lot of spreading, however I'll still suggest that you give them the space they might need (references on point!).
3. Step: Baking time
Only one more thing to do and then you'll be able to finally eat them: Bake the cookies for 10-12 minutes. Place them on a baking wire to let them cool down a little (they'll get a little bit harder).
