Christmas is now not just around the corner but basically here. Christmas trees are decorated, fairy lights light up the nights and home smells like buttery Christmassy home-made biscuits. Btw, If you're still on the hunt for a vegan Christmas dinner, check out my three-course menu, which I uploaded on December first.
However, for me it’s the first ever Christmas only vegan baked goods. But I am very specific when it comes to Christmas biscuits. They needed to taste and feel like Grandmas biscuits and I was not down to compromises! This might make it obvious, that I was not looking for a healthy option for Christmas biscuits but simply for a cruelty free option and let me tell you: I did not let myself down. Those biscuits taste buttery, sweet and just like childhood and Christmas. What a monster would I be to create something like this and not show you? So, let’s get right into it, turn up the Christmas music, put on your Christmas jumper and let’s create a little piece of Christmas

Today's piece of happiness:



All you need: (for approx. 25-30 biscuits)


400 gr. flour
200 gr. margarine
100 gr. sugar
50 gr. ground hazelnuts
2 tbsp chia seeds + 6 tbsp water
5 tbsp strawberry jam
5 tbsp apricot jam
Juice and zest of half a lemon
One vanilla pod
Some icing sugar for dusting



1. Step: Dough


Mix the water and the chia seed, put the mixture in the fridge for 10 minutes and stir it once more after 5 minutes.
Rub the cold margarine into the flour, either with your fingers or using a food processor.



Add the sugar, the nuts, the lemon zest, the vanilla and the chia eggs, then bring the dough together. 




Press it into a round, wrap it in cling film and let it rest in the fridge for 2 hours.



2. Step: Biscuit time
Preheat the ofen to 170°C.
Remove the dough from the fridge. Divide the dough into 4 pieces and roll out thinly one piece at a time, keeping the others in the fridge, on a lightly floured work surface.




Next get your biscuit cutter. Choose whatever shape you like, I used a fluted one. Cut out the biscuits and then use a small round cutter (or straw or something comparable) and cut a circle form the centre of half of your biscuits. You should end up with an even amount of ring biscuits (with a hole) and biscuits without a hole. Transfer the biscuits to a pan lined with baking paper. Traditionally the holes are just normal holes, but I felt quite fancy so I decided to go for heart-, hole-, and star shaped holes.  



Bake the biscuits in the preheated oven for 10 minutes, until they are golden-brown, then remove from the oven and leave to cool.

Finally dust the rings with icing sugar and put them on the jam-biscuits. 


Well, that’s it! Our human and animal friendly biscuits are done!
