Finally it's time for another piece of happiness!
This time, that close to christmas, I have a little piece for cold snuggle days.
It's perfect to fill your tummy with love, warmth and of course happiness!
So let's get started with today's beauty!

Today's piece of Happiness:


All you need:   

250 g flour
2 tsp baking powder
2 tsp mixed spices (or simply 2 tsp cinnamon)
200 g brown sugar
300 ml sunfloweroil
400 g carrots (peeled and grated)
75 g raisins (I used sultanas but honestly I just take what I got in my cupboard)
Egg-substitute for three eggs (I used 3 tsp baking powder mixed with 3 tsp water and 3 tsp apple vinegar)


1. Step: 
Preheat the oven to 180°C/350°F/gas 4 and grease a loaf tin.

2. Step: 
We'll start with the most fun part! Just kidding. It's not. It's carrot peeling and grating time.
Yes. Peeling was fun but grating is annoying.

Saying this, it's actually not if you put your carrots in a food processor and let it do the work for you. But well sometimes you forget that you have one (not that this would ever happend to ME...), you don't have one, you think that's a way to skip your workout (that's probably even true, it was exhausting!). Anyway, if you have one USE IT! Otherwise stay strong, it will be over soon! And of course it's worth it.

3. Step:  
After the carrots are grated, combine all the other ingredients (and carrots) in a large mixing bowl. Toss well to combine thoroughly. 





4. Step:
Spoon the mixture into the cake tin. 


Bake it for 50-60 minutes, or until a skewer inserted into the middle comes out mainly clean. It will probably still be a little wet but that's just fine, that's what we are looking for, because it's supposed to be a rather moist cake. This gooeyness is also the reason why I don't put any icing/cream on top of the cake, even though we all know that it traditionally belongs there (Side note: noone has ever complained about that yet)Remove the cake from the oven and set aside to cool for at least 10 minutes, then carefully remove the cake from the tin and set aside to cool completely.
